I have this one in my email signature.

"To be an equestrian in the classical sense is not just to be a rider. It is a position in life."
--Charles de Kunffy

ETA: The original meaning of "Equestrian" comes from ancient Rome. It was a "Class" of people.

"An Equestrian was a member of one of the two upper social classes in the Roman Republic and early Roman Empire."

More about the history and development behind it at:
http://en.wikipedia.org/wiki/Equestrian

“There is something about riding down the street on a prancing horse that makes you feel like something, even when you ain’t a thing.”
~Will Rogers

“If you’re a horse and someone gets on you, and falls off, and then gets right back on you, I think you should buck him off right away.”
~Jack Brandy

“If you desire to handle a good war-horse so as to make his action the more magnificent and striking, you must refrain from pulling at his mouth with the bit as well as from spurring and whipping him. [...] but if you teach your horse to go with a light hand on the bit, and yet to hold his head well up and to arch his neck, you will be making him do just what the animal himself glories and delights in.”
~Xenophon - The Art of Horsemanship

"Remember that there is very little difference between your horse and a chicken!"

My favorite one is one that I've heard every horse person utter more than once. It's short and simple..and we've all said it.

You have to say it in a very embittered and exasperated tone...."Ugh.... HORSES"
It's usually followed by a big sigh, or the banging of one's head into a wall.

"When you ride a borrowed horse, go easy on the whip." Don't know when or where it originated, but I've used it for years for people who ask a favor, then start giving orders like a drill sergeant. The same people will find more and more for you to do for them. Uh,......buh bye! [Bang Head]
