Saddle Fit Questions

I did a white towel test on a new (used) western saddle that I just got. The dirt spots were lighter behind both shoulders, but fairly even elsewhere. I was always told this means less contact in that area. I recently read somewhere that it means too much pressure, so the horse can't sweat there. Which is correct?

Also, if a saddle rolls when mounting (cinch is tight), is it too narrow or too wide? The same article I read was also contrary to what I have learned about this. I'm so confused!!!!

I know it isn't much help, but it could be either one. Some horses are so mutton withered its nearly impossible to find one wide enough. And a narrow withered horse, it would roll some if it were too wide. Pictures would be a huge help. One of the horse with no saddle, from front and side, same with the saddle on, no pad or blanket, and an additional saddled one from the rear.
